Topic 2: New foods – Fostering innovations in food design, processing and supply via demand-and-supply reorientation
I have a background in Food Engineering. My expertise is in seafood, and I have been working on seafood issues for 35 years. My research focuses on seafood processing, quality, analysis, shelf life, preservation, new product development, and waste utilization. I am interested in joining a consortium that focuses on seafood-related projects. Seafood processing produces a significant amount of waste. I want to be a partner in a project on the utilization of seafood waste and its transformation into value-added products. Of course, my search is not limited to this topic. Novel processing and preservation techniques, bioactive compounds and innovative packaging technologies may also be topics. I can contribute to a project on any topic related to seafood.
