Topic 2: New foods – Fostering innovations in food design, processing and supply via demand-and-supply reorientation
We are interested in collaborating as partners in project proposals concerning topic 2. Our expertise and facilities allow us to collaborate in activities regarding the biochemical and sensory characterisation of new products, the development of sustainable processing technologies, and the evaluation of innovative storage systems.
CREA-IT (Council for Agricultural Research and Agricultural Economy Analysis - Research Centre for Engineering and Agro-Food Processing) carries out activities in the field of agro-industrial and food processing, through studies on technological innovation and product quality, with a view to integrated and sustainable supply chains. CREA-IT deals with the nutritional and sensory characterisation of fresh, stored or processed agro-food products along the supply chain, processing optimisation through traditional and innovative technologies, shelf-life studies for quality improvement, development of new products, and recovery of waste and by-products. CREA-IT has expertise in quality evaluation through physicochemical and non-destructive measurements and in biochemical characterisation of food products, performed by advanced analytical techniques (HPLC, GC, GC-MS, GC-Olfactometry, Spectrophotometry).
