Topic 2: New foods – Fostering innovations in food design, processing and supply via demand-and-supply reorientation
The “Seminario de Lexicografía Hispánica” (HUM-922, https://lexicografhispa.ujaen.es/) research group has experience in the creation and dissemination of specialized knowledge in the gastronomic sector, generating the active cooperation of all the agents involved for the generation of multidisciplinary knowledge and thereby contributing to globalization, innovation, technological advancement and cultural change, transferring this knowledge to all users who approach sectors such as tourism and hospitality. In this sense, projects such as GastroLex (Gastronomy and Lexicon, https://gastrolex.ujaen.es/) stand out, a cultural experience within the framework of gastronomic tourism: in addition to tasting the cooked dish, diners are invited to learn about the origin and history of the name of the dish or the agri-food products that compose it. Therefore, our interest in collaboration is focused on the creation of tools and workshops that enhance the transfer of linguistic and cultural
knowledge in the field of gastronomic tourism, with a special focus on oleoculture and olive oil.

Within the University of Jaén, the “Seminario de Lexicografía Hispánica” (HUM-922, https://lexicografhispa.ujaen.es/) research group, within the studies on the Spanish lexicon in general and in the particular area of the dictionary, aims to advance knowledge within the field of Humanities and Spanish culture and language, with the ultimate goal of ensuring that research benefits society and enriches the training of future teaching professionals. For them, the main lines of teaching and research development are lexicography, the study of the language in documentary archive sources and the teaching of Spanish as a foreign language.The research group has extensive experience in the organization and development of scientific activities and products (conferences, research projects, publications, teaching and research tools) in ethnosemantics, linguistic ethnography or the linguistic landscape in the field of olive oil culture, regional and local gastronomy.
