Meat analogues manufacturing and characterisation
We are interested in collaborating on projects that incorporate sustainable materials, such as alternative proteins and fibres, into meat analogues. We can contribute a fully equipped pilot plant for the manufacture of any fresh, fermented, and cooked meat and analogue products; packaging for shelf-life testing; physico-chemical, spoilage, and sensory product evaluation; demonstration activities; and stakeholder engagement.
The MRI (German Federal Research Institute of Nutrition and Food) is a trusted advisor to the German government on consumer health protection in the food and nutritional sectors. MRI plays a central role in supporting the German Ministry of Food and Agriculture in matters such as food policy, dietary recommendations, and consumption monitoring (https://www.mri.bund.de/en/home/). Our team brings extensive experience in processing and characterisation as a platform for the pilot testing of future foods. Dr Bolumar has participated in and led several EU projects on advanced meat processing technologies (i.e. SHOCKMEAT, PLEASURE, ULTRATENDER, ROBUTCHER).
