Topic 1: Domestic food practices for enhancing sustainable and healthy diets
We are interested in all three topics of the call, such as increasing understanding of, ability to choose and consumption of sustainable, healthy, diverse and local produce. How can the purchase of such products increase in (all) households? We have some ideas about how this question could be addressed.
We have extensive experience with participatory research processes involving active engagement and co-creation with stakeholders (municipalities, businesses, other societal actors, etc.) and taking a systems approach to the value chain and the cross-cutting character of challenges in agri-food transitions. We have experience with facilitating regional living labs for development and innovation processes including diverse stakeholders, e.g. FATE living lab in Østfold county focusing on sustainable and healthy school canteens and value chains (the living lab approved as ENoLL member). The FATE living lab is a potential arena for research and activities related to agri-food transition, such as reducing food waste at all stages in the value chain, including kitchens/canteens.
Hvitsand holds an PhD titled “Participatory and collaborative approaches in sustainability transition” from the Norwegian University of Life Sciences and has conducted several other projects related to agri-food transitions.
Telemark Research Institute (TRI) is a non-profit independent research organization approved by The Research Council of Norway. Among the focus areas for the research group Social and Ecological Sustainability, is that of sustainability transitions in agri-food systems, inclusion and welfare. We often use a mixed methods approach, which also include participatory and co-creative approaches in the research process, such as through action / transdisciplinary research with multiple stakeholders across sectors and actor types.
