Topic 1: Domestic food practices for enhancing sustainable and healthy diets
I am interested in joining a consortium exploring novel methods (physical or biological) to enhance the nutritional value of various meat substitutes (plant- or insect-based), especially regarding the provision of essential transition metals such as iron, zinc, and copper in our diets, with the overall aim of fighting prevalent nutritional deficiencies worldwide.
Trained as a biologist, I possess 15 years of experience in the field of mineral nutrition of bacteria, plants, pigs, and humans. My technical repertoire spans from the biochemical characterisation of various foods and feeds (iron quantification and speciation, protein analysis), molecular genetics and cellular biology of bacteria and plants (for the production of proteins of interest), to pig studies (feeding trials, assessment of various iron markers in serum and liver).
The University of León (ULE) was founded in 1979 and today serves about 12,000 students on two campuses with a wide range of undergraduate, master's and doctoral degrees.
