Topic 1: Domestic food practices for enhancing sustainable and healthy diets
Within the scope of this project, it is aimed to develop functional foods that are rich in animal protein, nutritionally enhanced, sensorially acceptable, and compatible with daily dietary habits of society by incorporating fish meal obtained from the muscle tissue of white-fleshed, extremely low-fat fish species caught as by-catch into widely consumed convenience foods such as bread, pasta, noodles, hamburger buns, and pizza dough. We are looking for partners to work with on this.
Our organization is located on the Black Sea coast and has experience and a strong infrastructure in the field of aquaculture, having carried out numerous projects. We have also conducted various studies in food processing technologies and possess a wide network of contacts. Furthermore, our laboratory infrastructure is capable of performing many advanced analyses.
