Topic 2: Towards diverse, sustainable and circular food processing systems
We are interested in joining a consortium as a research partner and domain expert. Our primary interest is to apply Hyperspectral Imaging (HSI) technologies to traditional cheese systems to establish non-destructive quality control protocols and determine their environmental footprint.
We are looking for partners who can provide:
Hyperspectral camera hardware and imaging systems.
AI/Machine Learning expertise for spectral data processing.
Life Cycle Assessment (LCA) modeling expertise.

Van Yuzuncu Yıl University (Van YYU) is a prominent academic institution in Eastern Anatolia, Turkey—a region with a deep-rooted dairy heritage and high biodiversity. Our department specializes in the biochemical characterization, food safety, and modernization of traditional food systems.
Our research specifically focuses on high-value, long-ripened traditional cheeses, notably Kars Gravyer (the unique Gruyère of Anatolia) and Kars Kaşarı. These products involve complex ripening processes and eye formation that require precise monitoring. We bridge the gap between traditional food heritage and modern analytical needs by offering deep domain expertise in dairy science.
Strategically located in a major livestock hub, we provide a solid foundation for pilot studies and field data collection through our strong links with local producers and dairy cooperatives. We offer our region as a unique case study area for the implementation of Hyperspectral Imaging and non-destructive quality assessment technologies to ensure food safety and determine the environmental footprint of sustainable, pasture-based dairy chains.
