Topic 2: New foods – Fostering innovations in food design, processing and supply via demand-and-supply reorientation
We are actively seeking partners for collaborative project that align with the topic #2. Our lab has extensive experience in extracting functional compounds—particularly dietary fibers and phenolic compounds—from foods, food byproducts, and waste, as well as analyzing their structural, technological, and functional properties. Additionally, we specialize in developing functional food products aimed at promoting gut health and addressing related issues. In addition to advance analytical, rheological, and biochemical equipments, Our lab is very well-equipped to conduct in vitro fecal fermentation assays and in vivo (mice) experiments to investigate the effects of foods (mainly fibres) on colonic microbiota composition and function and gut-related health outcomes.
