Topic 1: The way towards sustainable and resilient food systems
My research focuse on food processing technologies, freeze-drying (lyophilization), encapsulation methods, and the development of functional foods.
In my academic work, I concentrate on the sustainable extraction of bioactive compounds from fruit, vegetable, and plant-based waste, as well as integrating these compounds into functional food products. Recent projects I have undertaken include [you can provide examples, e.g., "optimizing encapsulation techniques to create stable biocapsules" or "investigating the preservation of proteins and antioxidants through freeze-drying".
My primary goal is to innovate within food processing technologies and contribute to the design of healthy and functional food products. Through interdisciplinary collaborations, I aim to develop solutions that make future food systems more sustainable and nutritious.
