Topic 2: New foods – Fostering innovations in food design, processing and supply via demand-and-supply reorientation
We are eager to collaborate with partners who bring expertise in protein extraction and hydrolysate production using innovative and sustainable approaches. Our focus is on enhancing the functional and structural properties of protein hydrolysates through plasma technology and other innovative applications. In this context, we will investigate the functional and technological properties using in vitro and in silico methods. We are seeking experienced project partners with expertise in determining the physical properties of proteins or hydrolysates, sequencing peptides, and possessing different innovative technologies. We also aim to develop an alternative method for determining the structural and functional changes in hydrolysates compared to traditional approaches.
Our organization, representing the Turkish partner team, includes distinguished experts from Yıldız Technical University and Istanbul Technical University. Our expertise lies in applying innovative technologies to valorize proteins from waste and create functional food solutions. We specialize in plasma and enzymatic treatments, peptide sequencing, determining the functional and technological properties of protein hydrolysates through in vitro and in silico methods, developing alternative analytical methodologies, and designing functional food products. Our mission is to advance sustainable food systems by transforming waste-derived proteins into high-value functional ingredients for innovative vegan products.
